How do you approach a job that requires installation of new hardware? Do you measure, diagram, and write a plan? Or do you just wing it?

What resources do you have if you've never done something before? Even if you have prepared yourself on paper, how do you cope when the job goes all "Monday" on you? And when a customer walks in your shop and wants to "buy a handle", do you just them a "handle"?
